I have enjoyed making & eating this stew for the past few winters now. My brother made it one Thanksgiving while he was home & passed the recipe on to me. It is originally from epicurious.com. Click here for the recipe. It’s a dish that’s hearty, a little spicy & satisfying to vegans, gluten-free people & carnivores alike. I add chopped up spinach & kale to mine towards the end of cooking. I like the added color & nutrients. This dish is perfect for a cool winter’s day & is a great balancing dish for the vata dosha.
