This time of year I crave oatmeal for breakfast but don’t crave the gluten bloat. Overnight oats are tasty and cute in their little jars. You can prep them the night before or even a few days before you enjoy them. Many recipes online call for added sugar, which is totally unnecessary.
This recipe is for coconut almond gluten free overnight oats. This recipe is naturally low in sugar, tasty & filling.
1/2 cup Bob’s Red Mill gluten free old fashioned rolled oats
3/4 cup unsweetened plain almond milk
2 tbsp unsweetened shredded coconut
2 tsp chia seeds
Optional addition of dark chocolate chips (will add sugar and sweetness to taste)
1 tsp stevia (naturally derived zero calorie sweetener)
Combine ingredients in a bowl. Place in refrigerator overnight. Top with shaved coconut or unsweetened coconut chips and raw almond. Enjoy!
