1 summer squash
1 potato (I prefer to use sweet potatoes)
1 small yellow onion
2 cloves minced garlic
1 medium tomato
Parmesan cheese (optional)
Preheat oven to 400 degrees
Sauté diced onion and minced garlic in pan for about 3-5 minutes.
Thinly slice vegetables.
Spray baking dish with non stick spray. Spread garlic and onion mix over bottom of dish.
Arrange thinly sliced vegetables vertically in dish, alternating vegetables. Season with salt, pepper and thyme. Cover with foil and bake for 30 minutes.
Remove foil and sprinkle with Parmesan cheese. Bake and additional 15 minutes uncovered.
