These pancakes are a nice and fluffy alternative to regular pancakes. They are gluten free and Paleo. I make them small for our 2 year old to enjoy easily but I enjoy gobbling them up as well!
This recipe makes about a dozen small pancakes.
2 organic eggs
1 ripe banana
Mash up the ripe banana in a bowl. Add two eggs and mix together. Measure approximately 1.5 tablespoons of coconut flour and sprinkle cinnamon. Mix. Heat up coconut oil in a pan over medium heat. Dollup spoonfuls of batter into pan.
