{recipe} Muffin Tray Turkey Meatloaf

This recipe was a major win, everyone loved it.  I prepped everything while George was napping and then he helped me fill the muffin tray up with the meatloaf and put in to oven.   This is a basic recipe, I am already thinking of different ways to switch it up – could easily add in some veggies like spinach or zucchini to the meatloaf.

Ingredients:

1.25 lb of organic ground turkey meat

2 eggs, lightly beaten

1/3 cup gluten-free or regular breadcrumbs

1/2 onion, chopped 

1-2 tsp garlic powder

Salt & pepper to taste

Ketchup (we love this brand) 
Instructions:

Preheat oven to 350.   Sauté chopped onion in pan for 2-3 minutes then set aside.   Mix turkey, eggs, breadcrumbs and spices in large bowl.   Add cooled onions and 2 tbs ketchup and mix well.  Spray muffin pan with non-stick spray.  Fill muffin tins 3/4 of the way with meatloaf mixture.   Top with an added 2tbs of more ketchup.   Cook in oven for 30 minutes.   Let cool 5 minutes before taking out of muffin tray.
