{Recipe} Summer Strawberry Muffins 

We went to the local farm today and picked blueberries and strawberries.  The farmer said it was most likely the last good day for strawberries.  We had to walk further down the rows to find them and look around for ones that weren’t too mushy.  They looked perfect for baking.  I found strawberry muffin recipes online for inspiration and mixed together a few to come up with this one and I’m really happy with how they turned out.  


Ingredients:

  • 3 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon 
  • 1 1/4 cup coconut oil
  • 1 1/2 cup palm cane sugar 
  • 4 eggs beaten 
  • 2 1/2 cups strawberries, cut and slightly mashed 

Preheat oven to 450 degrees.  Beat 4 eggs inmixing bowl.  Mix in strawberries.  Combine dry ingredients in separate bowl.  Slowly blend in dry ingredients to egg and strawberry mixture.   Divide into muffin tins (fill 3/4 of the way).  Bake on 450 for 5 minutes then lower to 350 for 15-18 minutes longer.

  1. Meg, they look delicious. I hope you took George with you. I always loved picking strawberries with the boys. For the past two years I have made Strawberry Cello when the Jersey strawberries come in.
